Lipids as Liquid Crystals: morphological control and energy barriers

Abstract
Lipids are natures liquid crystals, ridged rods with a charged head group. They spontaneously generate bilayer interfaces that are acted upon by surface proteins to produce the most dynamic of cellular organelles, the endoplasmic reticulum. The surface proteins alter the lipid-lipid interactions to induce elaborate morphological control, and to lower free energy barriers. We present a free energy minimization model for the combined lipid-protein system.
